Navajo Robin’s Egg Blue Corn

Blue corn!! Have you ever?! Our first year growing corn that doesn’t get slathered in butter and salt! Navajo Robin’s Egg Blue Corn is left in the field until almost dry. We then harvested and strung it up to dry, some more, in the safety of our shop.

I couldn’t wait any longer so we popped the kernels off and tossed them into our freezer to get them good and hard. Once they were dry and frozen I tossed them into our Ninja and blended them into a cornmeal. Warning: This will be extremely loud!!

Seeing all the blue you would think the cornmeal would be blue in color but it wasn’t. It was more of of a gray but once we baked it into a corn muffin it was super fun to see the blue specks inside. Definitely will be keeping grinding corn into the garden rotations and adding a mill to the wish list.
